<h2><span style="font-family: times new roman,times; font-size: medium;"> </span></h2>
<h2>Ingredients (serves 4)</h2>
<p>• 200g vermicelli rice noodles</p>
<p>• 200g snow peas, thinly sliced lengthways into matchsticks</p>
<p>• 2 carrots, peeled, cut into matchsticks</p>
<p>• 1 bunch coriander, leaves picked</p>
<p>• 1 tbs lime juice</p>
<p>• 2 tsp sesame oil</p>
<p>• 4 (about 200g each) salmon fillets</p>
<p>• 2 tsp peanut oil</p>
<p>• 1 tbs toasted sesame seeds</p>
<p>• 1 quantity coriander pesto</p>
<p>• Lime wedges, to serve</p>
<h2>Method</h2>
<p>1. Place the noodles in a large heatproof bowl. Cover with plenty of boiling water and set aside for 5 minutes or until tender. Add the snow peas and set aside for 1 minute or until bright green and tender crisp. Refresh peas and noodles under cold running water. Drain well. Return to bowl and add the carrot, coriander, lime juice and sesame oil. Gently toss to combine. Season to taste with salt and pepper.</p>
<p>2. Heat a barbecue or char grill pan on high. Brush the salmon with the peanut oil and season with salt and pepper. Cook on char grill for 3-4 minutes each side for medium, or until cooked to your liking. Transfer salmon to a plate and cover with foil to keep warm. Set aside for 5 minutes to rest.</p>
<p>3. Divide the noodle salad evenly among serving dishes. Sprinkle with sesame seeds. Top with salmon and drizzle with coriander pesto. Serve immediately with lime wedges, if desired.</p>

<p>Here are the essential vitamin supplements you will need:</p>
<p><strong>1 Folic acid</strong>. This is usually important for women wanting to become pregnant and is a requirement for prenatal treatment. Insufficient folic acid could put your baby at risk for brain and spinal cord defects. Folic acid is also believed to prevent certain conditions such as heart disease, high blood pressure and memory loss. Folic acid intake can be naturally boosted by eating dark gre<img class="alignright size-full wp-image-3704" title="everyday health" src="http://www.perfecthealthnow.com.au/wp3/wp-content/uploads/2012/05/everyday-health.jpg" alt="" width="200" height="200" />en, leafy<span id="more-3702"></span> vegetables and drinking freshly made orange juice.</p>
<p><strong>2 Vitamin C</strong>. This helps to boost the immune system to keep germs and bacteria at bay so that the body can heal quicker during times of sickness. Vitamin C also promotes tissue growth and reduces one&#8217;s risk of cancer. This is found in most fruits, but especially in citrus.</p>
<p><strong>3 Iron</strong>. This is essential for menstruating women since iron deficiency can lead to anaemia which makes you weak. This can be found primarily in dark green, leafy vegetables.</p>
<p><strong>4 Vitamin B 12</strong>. This is especially important if you are over the age of 50. This can prevent memory loss and heart disease. It is found naturally in poultry, lean meats and eggs.</p>
<p><strong>5 Omega 3 fatty acids</strong>. Most people don&#8217;t get enough of this, which is why taking an omega 3 fatty acid supplement is very important. It helps to reduce the risk of osteoporosis, heart disease, and memory loss and is naturally food in fish, flax seed and walnuts.</p>
<p><strong>6 Vitamin B6</strong>. This helps with the production of hormones and brain functioning. It is often taken by pregnant women to help with morning sickness as well, and helps to maintain the blood sugar level. It is usually found in beans, fortified cereals and poultry.</p>
<p><strong>7 Calcium.</strong> This is crucial for the maintenance of strong bones but it also helps to reduce PMS symptoms in women. You can boost your intake by just buying the calcium supplement or increasing your consumption of dairy products such as milk and cheese.</p>
<p><strong>8 Vitamin A</strong>. This helps to fight off infections and improve the health of your eye, while at the same time contributing to healthy bones and teeth. Carrots, eggs and liver are excellent sources of this vitamin.</p>
<p><strong>9 Vitamin E</strong>. Every woman loves healthy hair and beautiful skin which is guaranteed with sufficient intake of this vitamin. This explains why it is featured in most shampoos and lotions which promise to give you healthy-looking skin and hair. It is mostly found in nuts.</p>

<p>Well this month’s ch ch ch change is to take one chore from your mum to show her your appreciation.  Contributing to your family’s environment is a wonderful way to form those strong family bonds.</p>

<p>And for those who are now all grown up&#8230;  why don’t you call your mum or dad every week to show them you care.  Most elderly people are very lonely and feel isolated.  You have the ability to change this for the positive and remind them that they are loved.</p>

<p>Your hormones are affected by your body clock. That’s why people are more likely to experience depression in the winter season, when the dark and gloomy weather confuse the body’s experience of day and night.</p>
<p>So, one easy way to boost your mood is to spend at least half an hour in the bright morning light. And if you still feel down… eat dark chocolate that will surely get your endorphins and serotonin going! But in moderation OK!</p>

<h4>Preparation Time &#8211; 10 minutes</h4>
<h4>Cooking Time &#8211; 20 minutes</h4>
<h4>Ingredients (serves 4)</h4>
<p>• 1 cup (210g) red lentils, rinsed well</p>
<p>• 3cm fresh ginger, sliced</p>
<p>• 2 bay leaves</p>
<p>• 1 cinnamon stick</p>
<p>• 2 tbs (40g) butter</p>
<p>• 1 large onion, finely chopped</p>
<p>• 2 cloves garlic, crushed</p>
<p>• 2 tsp turmeric</p>
<p>• 1 tsp cumin</p>
<p>• 1/2 tsp garam marsala</p>
<p>• 1/2 tsp chilli flakes</p>
<p>• 2 tbs lemon juice</p>
<p>• 1/2-1 tsp salt</p>
<p>• 1 tbs chopped coriander leaves</p>
<p>• Naan bread or pappadums, to serve</p>
<h4>Method</h4>
<p>1. Place lentils, ginger, bay leaves and cinnamon in a large saucepan with 3 cups of cold water. Bring to the boil, reduce the heat to medium and simmer, stirring to prevent sticking for 10-12 minutes. Discard spices and set aside.</p>
<p>2. Heat the butter in a large frying pan over a medium high heat. Add the onion and cook for 3 minutes. Stir in the garlic, turmeric, cumin, garam marsala and chilli flakes and cook for a further minute or until fragrant. Stir in the lemon juice and season to taste with salt.</p>
<p>3. Add the lentils to the pan and mix well. Cook for a further 3 minutes, stirring constantly. Remove from the heat. Stir in coriander and serve hot with naan bread or pappadums.</p>
