Roasted Pumpkin & Beetroot Salad
Roasted Pumpkin & Beetroot Salad
1 tablespoon olive oil
1 garlic clove, crushed
500g pumpkin, peeled, seeds removed, cut into 2cm cubes
500g beetroot, peeled, cut into 1cm wedges
1 Spanish onion, cut into thin wedges
Cracked black pepper
½ cup basil or Italian parsley leaves
Balsamic Dressing 1 ½ tablespoons extra-virgin olive oil 1 tablespoon balsamic vinegar 1 tablespoon lemon or orange juice 1 teaspoon honey 2 garlic cloves, chopped finely
- Preheat the oven to 200°C. Brush 1 or 2 baking trays with a little of the oil.
- Combine the remaining oil with the garlic. Place the pumpkin, beetroot and the onion in a large bowl and add the garlic oil. Toss the vegetables so that they become evenly coated with the oil.
- Arrange the vegetables on the baking tray/s and sprinkle with the pepper. Bake in the preheated oven until tender and lightly browned, about 30 minutes. Remove from the oven and set aside to cool to room temperature, then transfer the vegetables to a bowl.
- For the dressing, whisk all the ingredients together in a cup or small bowl with a fork, then drizzle over the vegetables.
- Decorate with the basil (or parsley) and serve.

Food intolerances
Unlike food allergy, food intolerance does not involve the immune system. Food intolerances are the most common trigger of gut symptoms; it can also cause other symptoms, such as headaches and fatigue. A low FODMAP Diet is designed to help sufferers of food intolerances.

What are enzymes?
Enzymes are a protein substance which is essential to the correct functioning of biochemical reactions which break down food into essential chemicals required by the body. Enzymes are complex proteins in the body that help convert food into chemical substances in order to provide the labor force and energy necessary to keep us alive. By supporting normal function, enzymes keep our immune system strong to fight off disease.
Digestive enzymes which digest our food have only three main jobs
- Protease enzymes digest protein
- Amylase enzymes digest carbohydrates
- Lipase enzymes digest fat
A lack of digestive enzymes can contribute to a myriad of illnesses including arthritis, obesity, hormone imbalances, osteoporosis, irritable bowel syndrome, heartburn, chronic fatigue, ADHD, chrohn’s disease, diverticulitis, constipation or diarrohea.
When reading the labels on enzyme products, the first thing to check is whether the enzymes come from animal or non animal sources. For example, some enzymes, including amylase, lipase and protease are derived from the pancreas of pigs or sheep. Although much of the research to date has involved these pancreatic enzyme supplements, they have limitations. For one, they are vulnerable to destruction by stomach acid. Animal enzymes are most effective of breaking down proteins, help a little with carbohydrates and fats, but do nothing for fibre.
Vegetarian enzymes begin digesting food almost immediately they enter the stomach.
Vegetarian enzymes are produced in a carefully controlled environment that is free of pesticides or contaminants, while animal enzymes come from pigs and sheep that have been raised on chemically altered feed and treated with steroids and antibiotics.
Vegetarian enzymes are more concentrated than animal enzymes; you can get the same amount of enzyme activity or more from fewer vegetarian supplements
